Overview

Opened in Summer 2025 and awarded One Michelin star in Spring 2026, Head Chef Nathan and the team prepare a multi-course tasting menu shaped by Guernsey’s unique produce, whilst maintaining a link to Nathan's Welsh upbringing with flecks of Welsh ingredients.

Michelin describes VRAIC as “the very definition of a destination restaurant”, while also highlighting the “stunning coastal location” and the “sublime natural flavours using an abundance of local produce”.

“It has to be delicious and balanced,” says Nathan, “but it also has to reflect their values, working with nature, using local, well-grown ingredients, and wasting as little as possible.” Naturally given our beautiful location right next to the golden sands they will be using lots of local fish and shellfish cooked over the open fire at the heart of the kitchen.

Opening hours

Wednesday to Thursday: 6.00pm - 11.00pm; Friday to Saturday: 12 noon - 4.30pm and 6.00pm - 11.00pm. Closed: Sunday, Monday and Tuesday.
