Each omakase experience — translating to “I’ll leave it up to you” — unfolds as a finely balanced sequence of up to 20 courses, chosen and prepared in the moment with the utmost respect for seasonality and technique.

Every detail, from the bespoke hinoki-wood counters to the serene rhythm of service, reflects the understated artistry of Tokyo’s most traditional sushi houses.
