Set on the edge of Eryri (Snowdonia) National Park, Palé Hall is a five-star Relais & Châteaux country house where landscape, hospitality and cooking come together with quiet confidence. The Victorian mansion, surrounded by parkland and gardens, is entering a new chapter under Chef Partner Luke Selby, formerly Executive Chef of Le Manoir aux Quat’Saisons.
Dining at Palé Hall is evolving in carefully considered stages. Alongside the all-day dining and the intimate Hearth chef’s table, Selby is shaping a new fine dining restaurant, drawing closely on the produce and character of North Wales. The approach is thoughtful and measured, focused on depth of flavour, seasonality and a strong sense of place.
Sustainability and provenance sit at the heart of the kitchen’s philosophy, recognised with a Michelin Green Star, while ongoing investment in the estate — from the gardens and grounds to new wellness facilities — continues to refine the experience of staying here.
