Since Thyme opened, the ambition has always been to create something that is more than a place… it’s a brand inspired by and centred around nature, its power and its magic.  It's this connection to nature that Thyme encapsulates so beautifully.  Within the walls of these restored historic Cotswold buildings, which embody local heritage, beauty and conservation, lies a passion for the land, food and entertaining.

The Ox Barn has been meticulously yet sympathetically restored - a state-of-the-art piece of agricultural architecture at its conception, now a 62 cover modern dining destination with soaring archways and original Cotswold stone rubble walls. Chef Charlie Hibbert’s food at Thyme reflects the seasons in every mouthful, harvesting the acres of kitchen garden and herb beds of their delicious bounty for use in Charlie’s lunch menu. Expect homegrown produce and British cuisine.

A huge amount of care and attention has also been invested in the development of the farm and gardens at Thyme, which – together with the 32 hotel rooms, Ox Barn restaurant, cookery school, Meadow spa, pool, Orchid House, Botanical Bothy & Bertioli beauty products, Baa bar, balcony room and piggery boutiques selling Bertioli silk wear, tableware and homeware, tithe barn for private events, cottages for private hire and The Swan pub – form a true village within the Cotswold village of Southrop.
