Overview
The Indian philosophy dictates that there are three energies or virtues present in the natural order of things: life-giving energy, the force of change and, lastly, the peace that brings all three into balance. Perfection is to be found when these virtues work in perfect harmony.
It was in search of this balance that Kahani was created, a new Indian fusion cuisine. The flavours and spices originate from the coloured spice markets of Old Delhi: the spirit was the connection made between people, their stories, laughter and food, found in Spain: the produce was the third virtue found, and that was here in England, with the very best, freshest and most organic ingredients for Kahani.
Translated to 'story' in Hindi, Kahani sees Peter Joseph take a bold step away from traditional Indian cooking, to a contemporary culinary style which showcases seasonal and sustainable British produce. The core philosophy of Kahani is centred around Peter's upbringing of communities using eating occasions to celebrate, bring people together, break boundaries and share tales.
