Chef’s Recipe : Stuffed Tomato from Asimakis Chaniotis at Pied a Terre

It’s rare to find Michelin star level vegan tasting menus but at legendary Pied à Terre in Fitzrovia there is an extensive range of menus on offer. STUFFED TOMATO WITH AROMATIC JASMINE RICE/DILL/MINT AND ROAST POTATOES

Asimakis  Chaniotis says,

One of my favorite recipes to cook on a weekday when I’m working (so needs to be fast and pretty tasty) is a dish that my mom used to make in summer when tomatoes in Greece are on top quality. It brings me a lot of memories, nostalgia as well as loads of flavour. Tomato is one of the ingredients with the highest amount of umami and corresponds to the flavour of glutamates.

Ingredients:

  • 100ml of vegetable stock
  • 3 tomatoes topped, with flesh completely scooped out and grated into the vegetable stock
  • 100gm of aromatic basmati rice
  • 1 clove of garlic finely chopped
  • ½ a reed onion finely chopped
  • 1 tsp of sugar
  • ½ bunch of dill finely chopped
  • ½ bunch of mint finely chopped
  • ½ tsp of salt
  • ½ a green pepper finely diced
  • 2 potatoes peeled and cut in wedges

Method: 

Place the hollowed tomatoes and the potato wedges on a tray and mix all the other ingredients together. Stuff the tomatoes with the mix of rice and ingredients, and all the leftover mix pour on the tray so the steam will cook the potatoes. Cover the tomatoes with the top part and then cover the tray with aluminium foil and place in the oven at 180C for around 30 minutes.

Take the aluminium foil off and roast for another 15 minutes.

Take the tray out of the oven and let it cool down for a little bit. Serve with a little drizzle a early harvest olive oil (which you can now purchase from Pied à Terre and take home).
